CIEH Level 1 Award in Induction into Food Safety for Manufacturing

CIEH Level 1 Award in Food Safety Awareness for Retail

This qualification helps to raise awareness of key food safety issues and provides employees with an induction to food hygiene, prior to undertaking the Level 2 qualification. It is also well suited to individuals handling low risk or wrapped foods. Front of house employees, such as waiting or check out staff and back of house employees such as porters, warehouse and delivery drivers are also well suited.

Duration: Half day programme

Assessment: Multiple choice examination.

CIEH Level 2 Award in Food Safety for Manufacturing

CIEH Level 2 Award in Food Safety for Retail

For anyone working in a catering, retail or manufacturing setting where food is prepared, cooked and handled. This may include pubs, hotels, restaurants, supermarkets, food and drink manufacturers, hospitals, care homes, schools, prisons etc. This course provides the delegate with a firm grasp of the importance of food safety and knowledge of the systems, techniques and procedures involved. It is recommended that this qualification is refreshed every three years.

Duration: One day programme

Assessment: Multiple choice examination.

CIEH Level 3 Award in Supervising Food Safety in Catering

CIEH Level 3 Award in Food Safety Supervision for Manufacturing

Level 3 Award in Food Safety Supervision for Retail

For managers and supervisors in small, medium or large catering, manufacturing and retail businesses. Particularly relevant for those who have to develop or monitor HACCP based food safety management procedures and systems. Anyone working in a supervisory position in the food business is not only responsible but also accountable for food safety. It is therefore vital they are equipped with both the knowledge and confidence to do their job effectively.

Duration: Three day programme. Can be run consecutively or one day per week.

Assessment: Multiple choice examination.

CIEH Level 3 Award in Implementing Food Safety Management Procedures

This qualification helps caterers to comply with EU legislation and provides a thorough understanding of how HACCP based procedures (such as Safer Foods Better Business) can be applied in a catering context. The qualification is aimed at business owners, supervisors and managers of small and medium sized catering and hospitality businesses.

Duration: One day programme.

Assessment: Assignment.

CIEH Level 3 Award in HACCP for Food Manufacturing

This qualification is designed to ensure candidates develop the required knowledge and practical skills to implement a HACCP plan in the workplace. Managers and supervisors of all food manufacturing businesses responsible for the development of a food safety management system based on the Codex principles of HACCP are recommended to complete this qualification.

Duration: One day programme.

Assessment: Assignment.

CIEH Level 4 Award in Managing Food Safety in Catering

CIEH Level 4 Award in Food Safety Management for Manufacturing

From food business owners to trainers, from production managers to hygiene auditors, this qualification meets the food industry’s need for a high level practical qualification. This qualification is also suitable for those wishing to deliver CIEH food safety qualifications as part of their training provision.

Duration: Five day programme. One day per week over five weeks (recommended)

Assessment: Two assignments and an examination.
